Malt Whisky is a living thing, in maturation there is a loss of liquid through the very fabric of the wooden barrels the Malt Whisky spirit is stored in. The wooden barrels serve many purposes; they hold the Malt Whisky spirit for the Customs Men. They allow the Malt Whisky Spirit to breath. That is why a Malt Whisky stored on Islay breaths a Sea Salt air and this gives the finished Malt Whisky a taste of the Sea, while a Highland or Speyside Malt Whisky breaths the pure mountain airs and a clean finish is imparted to the Malt Whisky spirit. The Malt Whisky Spirit derives a flavour from the wooden barrels and as such you can taste the Oak, Bourdon or Sherry of the wood or the liquor previously stored within. Of late, charring of the barrels has brought a toasted lilt to some more esoteric Whiskies. The loss of liquid through the wooden staves allows the Malt Whisky to become more viscous, more potent and stronger in developed flavours. Of course to keep Malt Whisky longer in Bond means the finished article is more expensive and there is less of it. All of the processes within the barrel emphasis the nature of the spring or burn water used the qualities of the malt cereals selected and the processes used in mashing and distilling. Each and every ingredient and factor in the making of these delightful Malt Whiskies has a direct effect on the taste and quality.
