At Highland Park the team insist on an uncompromising approach to whisky making, starting with slow malting of its barley on a stone floor at the distillery, turning it by hand for a more balance flavour. Next they smoke the barley over local aromatic peat; hand cut from Hobbister moor, this process brings a unique fragrant heather character to the whisky. The next process is to pour the spirit into Sherry oak casks from Spain. These Spanish casks cost ten times more than the usual Bourdon casks used for many other whiskies. The Spanish sherry cask imparts a priceless natural colour and flavour to the Highland Park 18 Year old Single Malt. Next the Whisky is left to mature in the cool Orcadian air. Testing and tasting follows after many years to combine spirit from the best casks. Once again the spirit is left to settle and harmonise and developing a complex whisky full of flavour, uniquely smooth and balance with rich toffee sweetness and a long mouth-watering smokey finish. This is an outstanding Dram. 43% by Volume 70cl.
